Sophisticated seniors eschew cafeteria fare
 
Move aside, meatloaf and mashed potatoes. Well-traveled seniors with sophisticated palates are demanding up-scale cuisine in retirement communities across the country.
 
Unlike the seniors 20 or 30 years ago, we have had the opportunity to experience much more, says James Arter, 76, a retired chiropractor who now lives in the Shell Point Retirement Community in Fort Myers, Fla. Even after we move into these communities, we want to live the same way.
 
Meals such as planked halibut and grilled filet mignon are becoming more common as many seniors express higher culinary expectations.
 
Many new facilities are hiring gourmet chefs to build a better menu. Maureen Boyle, a consultant for retirement food srvices, says this trend will only gain momentum as baby boomers age.
 
Some of these consumers have been exposed to resorts and country club backgrounds where they are used to high quality, so they are expecting to get the same treatment in a retirement facility, she says.
 
At the Windrows at Princeton Forrestal, a retirement community near Princeton University, chef William De-Mars is promising exciting themed menus as well as elegant dinners.
 
Everything we put out is going to be 99% fresh, and we will be constantly changing our menus, DeMars says. Once we get started, I am sure others will plan to do the same. Within the next year, changer are just really going to take off everywhere.
 
Retirement residents aren't the only ones getting gourmet meals at the Shell Point Retirement Community. The meals are so popular that locals have begun to dine with residents. In October, Shell Point will complete two more dining areas-there currently are five-to meet the demand of dinner.
 
Now we are not only competing with the resident kitchens, but we are also competing against restaurants in the area, says Al Slickers, hospitality director at Shell Point.
 
It's just really amzing what the reaction has been to our menus, Slickers says.
 
In Huntley,III, where Del Webb Corp., opened the Sun City planned retirement community, the dining facilities are receiving public fanfare as well.
 
The Walleye Grill Restaurant and Launge serves not only the 900 City-folk, but many of the restaurant-ravenous natives as well. 
 
We are building plates here, we don't just serve regular old food, says Bill Underwood, executive chef.
 
And he sees more fancy feasting in the future, as seniors continue to crave haute cuisine.

Imagine the number of times you've dined at a restaurant and thought your meal was great, while one of your dining partners was disappointed. Yet assisted living dining services are setting trends as good as any restaurant while delivering meals in a home-like setting.
 
The assisted living philosophy of choices, dignity, and independence pervades all areas, including dining services. Providers recognize that you, as the consumer, have a choice and that meals are an integral part of daily socialization and routine. Provider know they have to work hard to satisfy such an independent customer. They also recognize that nutrition is key to keeping residents healthy and independent in the residence.

When touring a prospective community, keep these points in mind:

Consider the service style. Are you waited on or do you self-serve buffet style? Do you observe the cooks making rounds in the dining room? Are residents served meals in courses vs, all items at once to avoid overstimulation?
 
Are guests encouraged to eat meals with you?
 
Is anything special done for holidays?
 
Does the dining atmosphere suit you?
 
Are residents assisted to the table and transferred out of their wheelchair if possible? Are walkers moved to the side for a fine-dining atmosphere?
 
How are special diets handled? Who explains the diet to you? What happens if you choose not to follow your diet? What level of diet can the community provide should your needs change over time? Are liberalized diets provided?
 
Are there opportunities for resident feedback on meals, such as monthly forum with the chef and administration? Does the kitchen encourage residents to submit their own recipes?
 
How is dining handled for dementia care residents? Nutrition and weight loss are key issues in this resident population. Are finger foods offered when appropriate? Is the dining setting social but calm and peaceful? Are nutrient-dense snacks offered?
 
Are residents encouraged to participate in meal service family style, cleaning up after meals and participating in food preparation as an activity?
 
Is a registered dietitian involved in menu planning and/or on a consultative basis?
 
Facilities handle dining services in a variety of ways and price accordingly. However, what most often defines residents' happiness with the dining experience is there comfort level with the service style and dining atmosphere and with the staff that run the department. Because different styles suit different needs, make sure the dining services style of the residence you choose suits yours.

It's also important to look for menus that are reasonably varied to suit individual tastes. A variety of serving styles is essential as well. Instead of ordering at the table and having their food brought to them, some residents may prefer to dine buffet-style from time to time. Many residences offer all of these choices.

It can be a challenge motivating a resident to eat who is on a special diet, especially if the food they've been prescribed is not the food they want to eat.
